The HLB value of polyglycerol fatty acid esters is generally between 10 and 15, and they can be used as starch improvers, emulsifiers, moisturizers, and colorants in food processing. They are a new type of food additive. Polyglyceryl fatty acid esters have strong resistance to bacteria, fungi, and yeast, therefore they have antibacterial effects. They can replace sodium benzoate and potassium sorbate as preservatives during use, making the product more natural and healthy.
