Dicalcium Phosphate Dihydrate, also known as dibasic calcium phosphate or calcium monohydrogen phosphate, is a type of calcium phosphate that is dibasic.Dicalcium Phosphate Dihydrate is white monoclinic crystalline powder, tasteless and odorless. It's soluble in dilute , but slightly soluble in water, insoluble in ethanol. It's stable in air. Relative density is 2.32. At 75ºC, it starts to lose water and turns to anhydrous salt. With strong heat, it'll even form Calcium Pyrophosphate.

Application

In food industry, Dicalcium Phosphate Dihydrate is used as leavening agent(flour, cake, baking product, etc), modifier( dough, bread, fried food, etc), buffering agent, nutritional supplement(cookies, milk powder, cold drink and ice cream), emulsifier and stabilizing agent. Dicalcium Phosphate Dihydrate functions as a dough conditioner in bakery products, as a bleaching agent in flour, as a source of calcium and phosphorus in cereal products, and as a source of calcium for alginate gels. Dicalcium Phosphate Dihydrateis used in dessert gels, baked goods, cereals, and breakfast cereals. Dicalcium Phosphate Dihydrate is also usedin poultry feed.It is also used in some toothpastes as a tartar control agent.
