Monosodium glutamate is white prismatic crystal or crystalline powder, odorless, with special meat flavor. The relative density is 1.635, the melting point is 195 ºC, and the filling specific volume is 1.20. It is easily soluble in water, and the pH of 5% aqueous solution is 6.7-7.2. It is difficult to dissolve in ethanol and ether. Without moisture absorption, the crystal water starts to be lost at 120 ºC, and the intramolecular dehydration starts at 150-160 ºC to form sodium pyroglutamine, which loses its fresh taste. It begins to decompose into pyrrole at about 270 ºC.
